Hey.
As far as I am aware there are no studies directly comparing mirtazapine and capromorelin.
Generally it is considered a safe drug, but I have seen more side effects in dogs and cats:

They mostly salivate and hate the taste of this but I have seen people report more severe reactions (decreases in blood pressure).
Generally, I have found it to be more effective than mirtazapine in cats.

Hey Rosie.
I hope you are well. This is a great question. I do think it is a reasonable choice for patients with CKD. As with all drugs and CKD patients we do need to monitor them carefully.
Capromorelin is now actually approved as a formulation for cats for CKD anorexia in the states:
I am not sure that we have specific data about whether we have to specifically dose reduce, so I would use as prescribed and monitor carefully.
